Summer time and Cole Slaw, they just seem to go together!

This salad went together quickly and was an instant hit at the table. Like most salads, it is better once the flavors mature over a few hours, or overnight. The pickle lovers in my family enjoyed this served with freshly sliced crisp baby cucumbers.

Chopped Cabbage

Chopped Cabbage

Ingredients

  • 2 cups shredded cabbage
  • 1 Granny Smith apple – peeled, cored and chopped
  • 3 tablespoons minced onion
  • 1/4 cup chopped parsley

Mix together dressing ingredients:

  • 1/2 cup plain Greek yogurt
  • 2 teaspoons honey
  • 5 Tbsp.  red wine vinegar
  • 1 tsp.  canola oil (if needed to thin)
  • 1-1/2 tsp.  Dijon-style mustard
  • salt and pepper to taste

Directions

  1. Whisk together the the ingredients for the dressing in a salad bowl. Refrigerate until chilled.
  2. Add the cabbage, apple, onion and parsley, mix well and serve chilled.

This salad goes together very quickly, chopping the cabbage is the most labor intensive part. Of course if you use a food processor that makes chopping cabbage that much quicker. Cole slaw is such a low calorie food that I don’t tend to use low fat greek yogurt.

  1. Hey Janet;

Salads and summer do go together very well. Just like Mungo Jerry and his song “In The Summertime” or Katrina and the Waves “Walking On Sunshine”. There are just things that scream summer and this salad certainly does!

I’ll be pointing it out to my lovely wife. :-)

This sounds absolutely yummy, I must get my human-owner to make some of this for those lovely summer days, I reckon it would go nice on the side of the plate with a tasty BBQ ;)

It goes great with ribs, it isn’t the creamy salad that most are used to. I hope you enjoy it, let me know what you think when you try do get your human owner to try this out for you.
