Summer Salad: Cole Slaw with Granny Smith Apple Slices

Summer time salad and Cole Slaw,

they just seem to go together!

This salad went together quickly and was an instant hit at the table. Like most salads, it is better once the flavors mature over a few hours, or overnight. The pickle lovers in my family enjoyed this served with freshly sliced crisp baby cucumbers.

 

Summer Salad: Cole Slaw with Granny Smith Apple Slices

  • Ingredients
  • 2 cups shredded cabbage
  • 1 Granny Smith apple – peeled (cored and chopped)
  • 3 tablespoons minced onion
  • 1/4 cup chopped parsley
  • Dressing ingredients:
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons honey
  • 5 Tbsp. red wine vinegar
  • 1 tsp. canola oil (if needed to thin)
  • 1-1/2 tsp. Dijon-style mustard
  • salt and pepper to taste
  1. Shed Cabbage and chopped a peeled, cored apple
  2. Peel and mince onion then chop parsley
  3. Whisk together the ingredients for the dressing and a small bowl.
  4. Combine all ingredients in a salad bowl.
  5. Refrigerate until chilled.
  6. This salad goes together very quickly, chopping the cabbage is the most labor intensive part. Of course if you use a food processor that makes chopping cabbage that much quicker. Cole slaw is such a low-calorie food that I don’t tend to use low-fat greek yogurt.
