Chocolate Chip Oatmeal Nut Cookies
I wanted to cheer up my husband after his favorite team lost on the road to the NCAA championship. Cookies seem to do the trick, I pulled out a few of our family favorites and couldn’t decide which I wanted; the oatmeal variety or standard tollhouse variety. In the end I mixed and matched the recipes, the cookies were good and put a smile on his face.
Chocolate Chip Oatmeal Walnut Cookies
Nuts are optional. Raisins can be substituted for chocolate chips.
- 1 cup all purpose flour
- 1-1/3 cup old fashion rolled oats
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup butter
- 2 eggs
- 1-1/2 tsp vanilla extract
- 12 oz chocolate chips
- 1 cup walnuts
- Preheat oven to 375 degrees
- Mix dry ingredients in a large bowl
- Beat the butter and sugar until smooth and fluggy, add eggs
- Add butter mixture to dry ingredients and mix well
- Drop by rounded teaspoons approx. 2 inches apart onto a lightly greased cookie sheet
- Bake for 10-12 minutes
- Cool on cookie racks, once cool, store in an airtight container
Tips and tricks:
- Use a scoop for the cookies to make them more uniform.
- Silicone or wax sheets make clean-up a breeze
