Chocolate Chip Oatmeal Nut Cookies

I wanted to cheer up my husband after his favorite team lost on the road to the NCAA championship. Cookies seem to do the trick, I pulled out a few of our family favorites and couldn’t decide which I wanted; the oatmeal variety or standard tollhouse variety. In the end I mixed and matched the recipes, the cookies were good and put a smile on his face.

Chocolate Chip Oatmeal Walnut Cookies

Nuts are optional. Raisins can be substituted for chocolate chips.

  • 1 cup all purpose flour
  • 1-1/3 cup old fashion rolled oats
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup butter
  • 2 eggs
  • 1-1/2 tsp vanilla extract
  • 12 oz chocolate chips
  • 1 cup walnuts
  1. Preheat oven to 375 degrees
  2. Mix dry ingredients in a large bowl
  3. Beat the butter and sugar until smooth and fluggy, add eggs
  4. Add butter mixture to dry ingredients and mix well
  5. Drop by rounded teaspoons approx. 2 inches apart onto a lightly greased cookie sheet
  6. Bake for 10-12 minutes
  7. Cool on cookie racks, once cool, store in an airtight container

  • Use a scoop for the cookies to make them more uniform.
  • Silicone or wax sheets make clean-up a breeze
