I like to blend the sweet potatoes vs serving in whole chunks, as it is easier to rewarm and\/or plate. I&#8217;ve never been a fan of the overly sweet marshmellowed sweet potato, the maple roasted combination is a wonderful replacement for your holiday table.<\/p>\n<p> <!--WPRM Recipe 34597--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Maple Roasted Sweet Potatoes<\/h2>\n<p>\t<img data-recalc-dims=\"1\" height=\"150\" width=\"150\" decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"https:\/\/i0.wp.com\/bodynsoil.com\/blog\/wp-content\/uploads\/2010\/11\/SD6286.jpg?resize=150%2C150&#038;ssl=1\"\/>\t<\/p>\n<p class=\"wprm-fallback-recipe-summary\">\n\t\tRoasting sweet potatoes is even easier than boiling and mashing them. Maple syrup glaze transforms this ultra-simple dish into something sublime.\t<\/p>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>2 1\/2 pounds sweet potatoes (peeled and cut into 1 1\/2-inch pieces (about 8 cups))<\/li>\n<li>1\/3 cup pure maple syrup<\/li>\n<li>2 tablespoons butter (melted)<\/li>\n<li>1\/2 cup pineapple<\/li>\n<li>1 tablespoon lemon juice<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>Freshly ground pepper (to taste)<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Preheat oven to 400\u00b0F.<\/li>\n<li>Arrange sweet potatoes in an even layer in a 9-by-13-inch glass baking dish. Combine maple syrup, butter, lemon juice, salt and pepper in small bowl. Pour the mixture over the sweet potatoes; toss to coat.<\/li>\n<li>Cover and bake the sweet potatoes for 15 minutes.
