{"id":1677,"date":"2010-10-24T19:27:00","date_gmt":"2010-10-24T19:27:00","guid":{"rendered":"http:\/\/bodynsoil.com\/blog\/?p=1677"},"modified":"2020-01-05T07:58:41","modified_gmt":"2020-01-05T12:58:41","slug":"beef-roast-with-root-vegetables-2","status":"publish","type":"post","link":"https:\/\/bodynsoil.com\/blog\/2010\/10\/beef-roast-with-root-vegetables-2\/","title":{"rendered":"Beef Roast with Root Vegetables"},"content":{"rendered":"<h4 style=\"text-align: center;\">Beef Roast with Root Vegetables<\/h4>\n<h6>Updated 2020<\/h6>\n<p>Cook this root veggies and beef roast in the beginning on Sunday and you&#8217;ll have left overs for a few creative meals during the week.\u00a0 Be sure to add additional root veggies to make a blended soup.<\/p>\n<blockquote><p>This recipe transfers to the Instant Pot by reducing the cooking time to approximately 35 minutes based on roast size.<\/p><\/blockquote>\n<p>The premise was that you make one big roast, then make meals from leftovers for a few days.<\/p>\n<p><a href=\"http:\/\/www.foodnetwork.com\/recipes\/robin-miller\/beef-roast-with-root-vegetables-recipe\/index.html\" target=\"_blank\" rel=\"noopener noreferrer\">Beef Roast with Root Vegetables<\/a><\/p>\n<ul>\n<li>I use a mid-sized roast (2lbs) and<\/li>\n<li>Increase the amount of root vegetables<\/li>\n<li>Adding generous amounts of carrots and turnips as well.<\/li>\n<\/ul>\n<div class=\"separator\" style=\"clear: both; text-align: left;\">Serve this with\u00a0 <a href=\"http:\/\/www.foodnetwork.com\/recipes\/robin-miller\/mixed-greens-with-raspberry-walnut-dressing-recipe\/index.html\" target=\"_blank\" rel=\"noopener noreferrer\">Mixed Greens &amp; Raspberry-Walnut dressing<\/a> and your night will be a good one.<\/div>\n<p><!--WPRM Recipe 34606--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Beef Roast with Root Vegetables<\/h2>\n<p>\t<img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"https:\/\/i1.wp.com\/bodynsoil.com\/blog\/wp-content\/uploads\/2010\/10\/beefroast.jpg?resize=150%2C150\"\/>\t<\/p>\n<p class=\"wprm-fallback-recipe-summary\">\n\t\tI love to toss in extra veggies, then puree them for a delicious soup..\t<\/p>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>1\/2 cup chopped onion<\/li>\n<li>2 large sweet potatoes (cut into 2-inch pieces)<\/li>\n<li>2 parsnips (peeled and chopped)<\/li>\n<li>1 celery root (celeriac, peeled and chopped)<\/li>\n<li>1 5-pound boneless beef roast, trimmed of fat ( I use a 2 lbs roast as 5 lbs is too big for 2 people)<\/li>\n<li>Salt and ground black pepper<\/li>\n<li>3 tablespoons all-purpose flour<\/li>\n<li>1 14-ounce can diced tomatoes<\/li>\n<li>1\/3 cup maple syrup<\/li>\n<li>2 teaspoons chili powder<\/li>\n<li>1 teaspoon ground cumin<\/li>\n<li>1 teaspoon garlic powder<\/li>\n<li>1 teaspoon onion powder<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Arrange onion, sweet potatoes, parsnips and celery root in bottom of slow cooker. Season beef all over with salt and black pepper. Rub flour all over beef. Place roast on top of vegetables in slow cooker.<\/li>\n<li>Whisk together tomatoes, maple syrup, chili powder, cumin, garlic powder, and onion powder.
