I knew as soon as I saw the recipe that it would be a hit, it certainly is.\u00a0 You can puree this soup once it is cooked&#8217; we never do and eat it as is.<\/p>\n<\/p><\/div>\n<div class=\"separator\" style=\"clear: both; text-align: center;\"><\/div>\n<p> <!--WPRM Recipe 34616--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Maui Black Bean Soup (via Clean Eating)<\/h2>\n<p>\t<img data-recalc-dims=\"1\" height=\"150\" width=\"150\" decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"https:\/\/i0.wp.com\/bodynsoil.com\/blog\/wp-content\/uploads\/2010\/08\/CIMG3287-1.jpg?resize=150%2C150&#038;ssl=1\"\/>\t<\/p>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>2 Tbsp extra virgin olive oil<\/li>\n<li>2 ribs celery (trimmed and coarsely chopped)<\/li>\n<li>1 fat carrot (peeled and chopped)<\/li>\n<li>1 small purple onion (peeled and chopped)<\/li>\n<li>1 red pepper (seeded and chopped)<\/li>\n<li>1 green pepper (seeded and chopped)<\/li>\n<li>2 cloves garlic passed through a press<\/li>\n<li>1 tsp dried cumin<\/li>\n<li>1 tsp dried oregano<\/li>\n<li>1 tsp dried basil<\/li>\n<li>1 tsp chili powder<\/li>\n<li>4 cups bone broth or low sodium broth chicken\/vegetable broth<\/li>\n<li>2 15 oz cans black beans<\/li>\n<li>1 15 oz can diced tomatoes<\/li>\n<li>sea salt and fresh ground black pepper<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>In a large skillet, heat olive oil over medium heat. Add celery, carrot, onion and bell peppers. Saut\u00e9 until onion become translucent, about 8 minutes. Add garlic and spices. Cook another 2 minutes<\/li>\n<li>Add stock or cooking liquid of your choice, beans and tomatoes. Bring mixture to a boil and then reduce heat.<\/li>\n<li>Cover and let simmer for about 20 minutes.<\/li>\n<li>Season with sea salt and fresh ground pepper.<\/li>\n<li>Serve hot with freshly sliced Parmesan cheese.<\/li>\n<li>I didn&#8217;t have corn and didn&#8217;t puree the soup&#8230;<\/li>\n<\/ol><\/div>\n<div class=\"wprm-fallback-recipe-notes\">\n\t\t\t<\/div>\n<\/div>\n<p><!--End WPRM Recipe--> <\/p>\n<p>Making soup doesn&#8217;t need to be a huge task. Once the vegetables are chopped, the rest of this soup is quick and easy to toss together.
