Our favorite thing to do is to place spinach in the bottom of the bowl before serving. The heat from the soup steams the spinach and adds just the right texture, and color, to the dish.<\/p>\n<p>Since the entire soup based is cooked before you add the fish of choice, you really don&#8217;t need to add fish at all but any protein would do. It&#8217;s such a colorful combination that just eating this as a vegetable soup would be wonderful. Without adding fish, if it were vegetable soup, I&#8217;d put spinach in the bowl then some chopped curd cheese, and let the hot soup steam the spinach and melt the cheese.<\/p>\n<p>&nbsp;<\/p>\n<p> <!--WPRM Recipe 34646--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Fish Stew Giardiniera<\/h2>\n<p>\t<img data-recalc-dims=\"1\" height=\"150\" width=\"150\" decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"https:\/\/i0.wp.com\/bodynsoil.com\/blog\/wp-content\/uploads\/2009\/08\/fishstew.jpg?resize=150%2C150&#038;ssl=1\"\/>\t<\/p>\n<p class=\"wprm-fallback-recipe-summary\">\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>2 tsp olive oil<\/li>\n<li>4 scallions<\/li>\n<li>3 cloves of minced garlic<\/li>\n<li>1 red bell pepper (diced)<\/li>\n<li>2 carrots (thinly sliced)<\/li>\n<li>14 1\/2 oz can stewed tomatoes (diced (use fresh when in season))<\/li>\n<li>1\/2 cup bottled clam juice<\/li>\n<li>8 3\/4 oz can of red kidney beans (rinsed and drained)<\/li>\n<li>1\/2 tsp dried oregano<\/li>\n<li>1\/4 tsp salt<\/li>\n<li>1 lb skinless (boneless white fish)<\/li>\n<li>1 cup scallops<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>In a large skillet or stock pot, heat the oil until hot over medium heat. Cook the scallions and garlic until the scallions are wilted, about 1 minute. Add the bell pepper and carrots, cook, stirring occasionally, until the vegetables have softened, approx 4 min.<\/li>\n<li>Stir the tomatoes into the pan, breaking them up with your spoon into smaller pieces. Add the clam juice and bring to a boil.
