This year I will have another pair of hands to help, and eyes, so we don&#8217;t <a href=\"https:\/\/dailypost.wordpress.com\/prompts\/scorched\/\">Scorch<\/a> the potatoes. Image Via: AllRecipes.com<\/p><\/div>\n<p>I remember the first time we had dinner with family other than my own. The hostess had prepared all the sides, then placed them in the oven to warm. In the past, our house always had an all hands on deck approach to those final minutes before serving. This hostess handled the rush on her own, without accepting any of my offers of help; I was awestruck.<\/p>\n<p>&nbsp;<\/p>\n<p>I&#8217;m hacking our Thanksgiving timing this year by <a href=\"http:\/\/cooking.nytimes.com\/recipes\/543-45-minute-roast-turkey\" target=\"_blank\" rel=\"noopener noreferrer\">cooking the turkey flat,<span id=\"a13j5oab049\" class=\"abt-citation noselect mceNonEditable\" data-reflist=\"[&quot;m9cor7he5&quot;]\"><sup>1<\/sup><\/span><\/a> to reduce cook time.\u00a0 It&#8217;s an interesting approach which still gives that roasted turkey look, with a lower profile. I&#8217;m thinking that the breast will hold it&#8217;s moisture with less time in a hot oven. We serve our turkey carved, the look just out of the oven shouldn&#8217;t matter.<\/p>\n<p>[bctt tweet=&#8221;Flattening a bird, called spatchcocking, sends my 13 year old boy brain into fits of laughter.&#8221;]<\/p>\n<p>I&#8217;ll review more recipes for instructions on the best approach to this technique. Most of what I&#8217;ve read attributes the technique to <a href=\"http:\/\/www.seriouseats.com\/recipes\/2008\/11\/mark-bittman-forty-five-minute-roast-turkey-recipe.html\" target=\"_blank\" rel=\"noopener noreferrer\">Mark Bittman<\/a>,<span id=\"avb1jlojsp\" class=\"abt-citation noselect mceNonEditable\" data-reflist=\"[&quot;jj7o5qitb&quot;]\"><sup>2<\/sup><\/span> it&#8217;s been around longer than he has however.<\/p>\n<p>I&#8217;d love to hear your stories about spatchcocking and what works best as it relates to cooking a turkey.<\/p>\n<p>If you do scorch the potatoes and catch them early enough, you might be able to save the top layer.
