Chocolate Tofu Pudding or Chocolate Truffles

Chocolate Tofu Pudding and/or Chocolate Truffle

I still remember watching Alton Brown’s Food Network show titled “Tofuworld,” detailing all the fun things you can do with Tofu. This episode had four recipes: Tall & Tangy Thangy, Fillet O’Fu, No Guilt Caesar (which I do want to try) and my favorite Moo-Less Chocolate Pudding.

I didn’t make the recipe as detailed by Alton Brown as I didn’t use vanilla or place in a crumb crust.

Chocolate Tofu Pudding and/or Chocolate Truffles.

  • 24.6 oz Silken Tofu (non GMO)
  • 20 oz Dark Chocolate
  • 1.3 Tbsp Honey
  • 0.5 cup Amaretto Liquor (almond)
  1. Gently melt Chocolate in double boiler,
  2. add honey and the Almond Amaretto liquor ~ stir until well blended.
  3. Place drained Silken Tofu in food processor, add chocolate mix.
  4. Puree until well blended, stopping machine to scrape sides of bowl when needed.
  5. Place approximately 1/2 cup into 6 pudding into 6 serving bowls, refrigerate.
  6. To make Truffles:
  7. Once chilled; take the unused portion of mix out of the refrigerator.
  8. Using two spoons, put a golf ball sized portion into a bowl of chopped nuts.
  9. Holding the bowl, roll the golf ball sized ball around in nuts,
  10. Once covered, you can pick up and roll into a ball
  11. Return rolled truffles to the refrigerator until ready to serve.
