Chocolate Date Nut no bake cookies/bar
This is a bar/cookie that tastes like the Lara Jocalat bars.. Try these and your family will love them. What better way to get your kids to eat fruit and fiber.. I love the premade bars and thought I could reproduce them in my own kitchen. I gave one to my son without telling him what I had been trying to do and asked what he thought of them. He immediately said they tasted just like Jocalat, success..
This is a very flexible recipe, you can add a variety of ingredients to personalize this cookie to your taste but do need the dates or plums as a base.
Chocolate Date Nut no bake cookies/bar
- Dates or Plums (1 cup, pitted, chopped)
- Walnuts (1 cup, chopped)
- Cocoa (dry powder, unsweetened, .25 cup)
- Natural peanut butter (2 tbsp)
- Granola (.25 cup)
- Banana (fresh, .5 medium (7" to 7-7/8" long))
- Coconut (shredded unsweetened, 3 tbsp)
- Place the dates, walnuts, cocoa powder, peanut butter and banana in a food processor and blend well. Add granola and pulse a few times to incorporate into the mix.
- <span data-mce-bogus=”1″ class=”mceItemHidden”><span></span>Shape approximately 1 tablespoon of mix into a ball and roll in the flaked coconut (optional). Place in an airtight container and refrigerate.</span>
- <span></span>I add a variety of nuts and also dried cranberries and will not always roll in coconut. I also use premade granola and most of my ingredients are organic by choice.
I've never heard of Jocalat but these do sound really good! I will have to make some for Adam to take with him on his long bike rides! 🙂
