Savory Steel Cut Oat Pilaf with Instant Pot

Steel Cut Oat Pilaf

One of our favorite go to side dish recipes as it is quick and simple. This steel-cut oat pilaf is a perfect side dish with a taste similar to stuffing, but much better.

Often I overhear people talking about how long it takes to cook steel-cut oats but I don’t find that to be an issue in this quick recipe. No need to use your pressure cooker, or your Instant Pot, as this recipe is on your table faster than most.

Steel Cut Oat Pilaf

  • 1 large Sweet Onion (thinly sliced (approx. 1/3 cup))
  • 1 Tbsp Butter
  • 2 Tbsp Olive Oil
  • 1 cup Oats (Steel Cut)
  • 2 tsp Parsley Flakes
  • 1 pinch ground Pepper
  • 1 pinch Sea Salt
  • 1-3/4 cups Broth (Vegetable, Chicken, Beef, Broth)
  1. Cook onion in butter until limp and translucent, about 5 to 10 minutes; stirring often.
  2. Add oats and stir for 1 minute, toasting them.
  3. If using the Instant Pot add parsley flakes and cook using manual setting for 3 minutes. When time is up, use quick release or natural release; open cover and test, replace cover and keep pot on to soften oats.
  4. Add broth, bring to a boil over high heat, turn down heat and simmer, covered, until liquid is absorbed, about 15 minutes.
  5. Stir occasionally add parsley flakes about 2-3 minutes before oats are finished cooking.
  6. Adjust with salt and pepper if needed.

*personal note: I add toasted almonds to mine at the end for a little more crunch and I adjust the oil according to my dietary need.

We enjoy steel-cut oat dishes and would love to try a few more. What favorite dish do you have to share?

We’ve converted this for the Instant Pot, it is ready to eat with 3 minute manual cooking time and/or letting set in the keep warm feature until ready.
