Chocolate Tofu Pudding or Chocolate Truffles

Chocolate Tofu Pudding and/or Chocolate Truffle

I still remember watching Alton Brown’s Food Network show titled “Tofuworld,” detailing all the fun things you can do with Tofu. This episode had four recipes: Tall & Tangy Thangy, Fillet O’Fu, No Guilt Caesar (which I do want to try) and my favorite Moo-Less Chocolate Pudding.

I didn’t make the recipe as detailed by Alton Brown as I didn’t use vanilla or place in a crumb crust.

  1. I see you have two kinds of chocolate. Are either of them sweetened? Could I use powder instead?… What specific kinds did you use?

    1. Laurie, I used dark chocolate, the reason for two kinds is due to me not having enough of one type. I used unsweetened dark chocolate, you can try powered chocolate, let me know how that works out. The only concern might be that the powered chocolate wouldn’t help firm it up the same as the bars. The recipe is for a double batch, feel free to cut it in half.

  2. I made them with 1 full oz of almond flavoring, but that was way too much. I think the amaretto affect w the alcohol is apt to be why you add any flavor. So far dh likes the pudding… waiting for it to chill to make it easier to roll into balls. (Also I used 2T valhrona cocoa powder to add to the truffle taste and that seemed to work well. It may have made it less sweet though.

    1. Sorry about the flavoring coming out too strong, I should have suggested trying it a bit at a time until you got it to the level you enjoyed. If it is too bitter you could add a bit more honey to round out the flavor.
